Oven Baked Pork Chops

Pork and Apples are a fantastic combination… and this recipe is very forgiving so whatever sort of apples you have to hand will do!


  • 8 pork chops
  • Olive Oil
  • Rosemary
  • 1 Lemon
  • 3 Parsnips
  • 8 Potatoes
  • 4 Garlic
  • 4 Apples
  • Salt and Pepper


  • Preheat oven to 180degrees
  • In a bowl hand a lug of olive oil, the chops, Lemon Juice, garlic and rosemary to marinate for as long as you have or even just until you have
  • Peel and cut lengthwise the Parsnips and Potatoes
  • Core and quarter the apples
  • Find a good sized baking tray and add all the ingredients together and pour over enough marinade to generously coat the vegetables
  • Bake for 45min-1hour depending on how thick the chops are cut
